Strawberry Cream Pastries

Description

Delicious cream-filled pastries topped with fresh strawberries.


Ingredients

  • 1 cup water
  • 1/2 cup unsalted butter (cut into pieces)
  • 1 cup all-purpose flour
  • 1/4 teaspoon salt
  • 4 large eggs
  • 1 cup heavy cream (chilled)
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract
  • 2 cups fresh strawberries (sliced)

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a saucepan, combine water and butter over medium heat until the butter is melted.
  3. Add flour and salt, stirring vigorously until the mixture forms a ball and pulls away from the sides of the pan.
  4. Remove from heat and let cool for 5 minutes. Then, add eggs one at a time, mixing well after each addition until smooth.
  5. Spoon or pipe the dough onto the prepared baking sheet in squares, leaving space between each.
  6. Bake for 25 minutes or until golden brown. Remove from oven and let cool completely.
  7. In a mixing bowl, whip the heavy cream with powdered sugar and vanilla extract until soft peaks form.
  8. Once the pastry squares are cool, cut them in half horizontally.
  9. Spoon or pipe the whipped cream onto the bottom half of each pastry, then top with sliced strawberries.
  10. Place the top half of the pastry back on and dust with powdered sugar if desired.

Notes

  • Ensure the heavy cream is well chilled for best whipping results.
  • Any leftover whipped cream can be served on the side.
