Instructions
- Prepare the Cake: Preheat the oven to 350°F (175°C). Line a 10×15 inch jelly roll pan with parchment paper. Sift together the flour, baking powder, and salt in a small bowl. In a large bowl, beat the eggs for about 2 minutes until thick. Gradually add the sugar and continue beating until the mixture is pale and fluffy. Add the vanilla extract and milk, mixing until combined. Gently fold the dry ingredients into the wet ingredients until just combined. Spread the batter evenly into the prepared pan. Bake for 10-12 minutes or until the cake springs back when lightly touched.
- Roll the Cake: Once baked, immediately turn the cake onto a clean kitchen towel dusted with powdered sugar. Peel off the parchment paper. Roll the cake up in the towel, starting with the shorter edge. Let it cool completely.
- Prepare the Cream & Strawberry Filling: For the cream filling, whip the heavy cream, powdered sugar, and vanilla extract until stiff peaks form. For the strawberry filling, combine chopped strawberries, sugar, and lemon juice. Let it sit for about 10 minutes.
- Assemble the Cake Roll: Carefully unroll the cake and spread the whipped cream evenly over the surface. Spread the strawberry filling on top of the cream. Roll the cake back up gently without the towel. Trim the edges for a cleaner look.
- Decorate: Drizzle with additional whipped cream and garnish with strawberries on top. Optionally, sprinkle with additional powdered sugar before serving.
