Ingredients

- 1 cup creamy peanut butter
- 1/2 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 1/4 cups all-purpose flour
- 3/4 teaspoon baking soda
- 1/4 teaspoon salt
Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper or a silicone mat.
- In a large bowl, beat together peanut butter, softened butter, granulated sugar, and brown sugar until fluffy.
- Add the egg and vanilla extract and mix until well combined.
- In a separate bowl, whisk together flour, baking soda, and salt.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- Scoop tablespoon-sized dough balls, roll them, and place them on the baking sheet.
- Use a fork to press a crisscross pattern onto each dough ball.
- Bake for 9–11 minutes, until edges are lightly golden and centers are soft.
- Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
Notes
- For added flavor, you can sprinkle some sea salt on top before baking.
