Description

A hearty and healthy vegetable lentil stew, perfect for a cozy dinner.


Ingredients

  • 1 medium onion, chopped
  • 1 clove garlic, minced
  • 4 tablespoons butter
  • 1 1/2 cups vegetable stock
  • 1 cup uncooked lentils
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon dried summer savory
  • 1 pint canned tomatoes
  • 1 stalk celery with leaves, chopped
  • 1 medium carrot, cleaned and diced

Instructions

  1. In a large pot, melt butter over medium heat. Sauté chopped onion and minced garlic until fragrant and translucent.
  2. Add diced celery and carrot, cooking for 3–4 minutes to soften slightly.
  3. Stir in uncooked lentils, vegetable stock, canned tomatoes (with juice), salt, black pepper, and dried summer savory.
  4. Bring the mixture to a boil, then reduce heat to low and cover.
  5. Simmer for 25–30 minutes, or until lentils are tender and flavors have melded.
  6. Check seasoning and adjust with additional salt or pepper if needed.
  7. Serve warm as a main dish with crusty bread or as a side to complement your favorite protein.
