Delicious chocolate chip oatmeal cookies that are easy to make and irresistible!
Ingredients

- 1 stick (1/2 cup) salted butter, at room temperature
- 1/2 cup coconut oil, melted
- 1 cup brown sugar
- 1/3 cup granulated sugar
- 2 large eggs, plus 1 egg yolk
- 1 tablespoon vanilla extract
- 2 1/2 cups old fashioned oats
- 2 cups all-purpose flour
- 2 teaspoons baking soda
- 1 teaspoon salt
- 1 cup semi-sweet chocolate chips or chunks
- 1 cup chopped dark chocolate
- flaked sea salt
Instructions
- Preheat the oven to 350°F.
- Line a baking sheet with parchment paper.
- Mix all ingredients except the chocolate in a mixing bowl until fully combined.
- Fold in the chocolate.
- Roll the dough into rounded 1-tablespoon balls and arrange on the baking sheet.
- Bake for 6 minutes, then rotate the pan, then tap it on the counter 1 time.
- Bake another 2–3 minutes, until the edges are set and the centers are just barely glossy.
- Cool on the baking sheet to finish the cooking.
- Sprinkle with flaky salt.
Notes
- Ensure butter is at room temperature for easier mixing.
- Adjust baking time based on desired chewiness.
