Description

A delicious one-pan meal featuring smoked sausage, vegetables, and rice cooked to perfection.


Ingredients

  • 1 tablespoon olive oil (for sautéing)
  • 13 ounces smoked sausage (sliced into 1/4-inch coins)
  • 1 medium yellow onion (diced)
  • 1 red bell pepper (diced)
  • 3 cloves garlic (minced)
  • 1 cup long-grain white rice (rinsed and drained)
  • 2 cups low-sodium chicken broth
  • 1 can (14 ounces) diced tomatoes (undrained)
  • 1 teaspoon paprika
  • 1 teaspoon Italian seasoning
  • 1/4 teaspoon red pepper flakes (optional, for heat)
  • 1/2 teaspoon kosher salt (plus more to taste)
  • 1/4 teaspoon ground black pepper
  • 2 tablespoons fresh parsley or green onions (chopped, for serving)

Instructions

  1. Warm the olive oil in a large skillet over medium-high heat until it shimmers.
  2. Add the sliced sausage and let it brown, stirring occasionally for about 3–4 minutes.
  3. Toss in the diced onion and bell pepper. Sauté for 4–5 minutes until softened.
  4. Mix in the minced garlic, paprika, Italian seasoning, red pepper flakes, salt, and pepper. Cook for about 30 seconds.
  5. Add the rinsed rice, stirring to coat it in the mixture for 30–60 seconds.
  6. Add the chicken broth and the can of diced tomatoes with their juices. Stir well and bring to a vigorous boil.
  7. Lower the heat, cover, and let it gently simmer for 15–18 minutes until the rice is tender.
  8. Remove from heat, keeping it covered for 5 minutes.
  9. Use a fork to fluff the rice, adjust the seasoning, and garnish with parsley or green onions before serving.

Notes

  • This dish can be made with any type of sausage you prefer.
  • Feel free to add other vegetables like spinach or corn for extra nutrition.
