Description

Ingredients

  • 4 pieces ripe peaches (sliced)
  • 1 cup cottage cheese (or Greek yogurt for a tangy twist)
  • 1 cup mini marshmallows
  • 1/2 cup chopped nuts (such as walnuts or pecans)
  • 1/4 cup shredded coconut (optional)
  • 2 tablespoons honey (or maple syrup for sweetness)
  • 1 pinch salt (to enhance the flavors)

Instructions

  1. Wash and slice the ripe peaches into bite-sized pieces and place them in a large mixing bowl.
  2. In another bowl, combine cottage cheese (or Greek yogurt) with honey or maple syrup and a pinch of salt. Stir until well blended.
  3. Pour the creamy mixture over the sliced peaches. Gently fold in the mini marshmallows and chopped nuts, being careful not to mash the peaches.
  4. If desired, add shredded coconut for an extra crunch and flavor boost. Mix until distributed evenly.
  5. Cover the salad with plastic wrap and refrigerate for about 30 minutes to allow the flavors to meld. Serve cold on a beautiful platter.
