- 4 pieces ripe peaches (sliced)
- 1 cup cottage cheese (or Greek yogurt for a tangy twist)
- 1 cup mini marshmallows
- 1/2 cup chopped nuts (such as walnuts or pecans)
- 1/4 cup shredded coconut (optional)
- 2 tablespoons honey (or maple syrup for sweetness)
- 1 pinch salt (to enhance the flavors)
Instructions
- Wash and slice the ripe peaches into bite-sized pieces and place them in a large mixing bowl.
- In another bowl, combine cottage cheese (or Greek yogurt) with honey or maple syrup and a pinch of salt. Stir until well blended.
- Pour the creamy mixture over the sliced peaches. Gently fold in the mini marshmallows and chopped nuts, being careful not to mash the peaches.
- If desired, add shredded coconut for an extra crunch and flavor boost. Mix until distributed evenly.
- Cover the salad with plastic wrap and refrigerate for about 30 minutes to allow the flavors to meld. Serve cold on a beautiful platter.
Notes
- For a tangier flavor, use Greek yogurt instead of cottage cheese.
