Description

Delicious overnight oats combined with fresh raspberries, lemon, and a touch of honey or maple syrup.


Ingredients

Scale
  • 2 cups rolled oats
  • 2 cups milk (dairy or non-dairy)
  • 1 cup Greek yogurt (optional for creaminess)
  • 1/4 cup honey or maple syrup (to taste)
  • 1 teaspoon vanilla extract
  • 1 large lemon (zest and juice)
  • 1 cup fresh raspberries (or frozen, thawed)

Instructions

  1. In a large bowl, combine rolled oats, milk, Greek yogurt, honey or maple syrup, and vanilla extract. Mix well.
  2. Add lemon zest and juice to the mixture and stir until fully incorporated.
  3. Divide the oat mixture evenly among mason jars or airtight containers.
  4. Layer fresh raspberries on top of each jar.
  5. Seal the jars and refrigerate overnight (or at least 4 hours) to allow the oats to absorb the liquid.
  6. In the morning, give the oats a good stir and enjoy cold, or warm them up in the microwave if desired.

Notes

  • For a thicker texture, use less milk.
  • Feel free to switch out the raspberries with other fruits like blueberries or bananas.
