Description
Delicious overnight oats combined with fresh raspberries, lemon, and a touch of honey or maple syrup.
Ingredients

- 2 cups rolled oats
- 2 cups milk (dairy or non-dairy)
- 1 cup Greek yogurt (optional for creaminess)
- 1/4 cup honey or maple syrup (to taste)
- 1 teaspoon vanilla extract
- 1 large lemon (zest and juice)
- 1 cup fresh raspberries (or frozen, thawed)
Instructions
- In a large bowl, combine rolled oats, milk, Greek yogurt, honey or maple syrup, and vanilla extract. Mix well.
- Add lemon zest and juice to the mixture and stir until fully incorporated.
- Divide the oat mixture evenly among mason jars or airtight containers.
- Layer fresh raspberries on top of each jar.
- Seal the jars and refrigerate overnight (or at least 4 hours) to allow the oats to absorb the liquid.
- In the morning, give the oats a good stir and enjoy cold, or warm them up in the microwave if desired.
Notes
- For a thicker texture, use less milk.
- Feel free to switch out the raspberries with other fruits like blueberries or bananas.
