A delicious and healthy meal featuring juicy lemon chicken served over fragrant cilantro brown rice.
Ingredients

- 2 pieces chicken breasts (Make sure your chicken is Halal.)
- 2 pieces lemons (juiced)
- 2 tablespoons olive oil (Plus extra for cooking.)
- to taste salt
- to taste pepper
- 1 cup cilantro (chopped)
- 1 cup brown rice (Substitutions: quinoa or basmati rice can be used.)
- 2 cups chicken broth (Ensure there are no forbidden ingredients.)
Instructions
- In a bowl, combine lemon juice, olive oil, salt, and pepper. Add the chicken breasts and let them marinate for at least 20 minutes.
- In a medium pot, bring the chicken broth to a boil. Add the brown rice and let it simmer on low heat, covered, for about 30 minutes or until tender. Fluff it with a fork and mix in the chopped cilantro once done.
- Heat a pan over medium heat and add a little olive oil. Remove the chicken from the marinade and cook for about 6-8 minutes on each side or until golden brown and fully cooked through.
- Plate your cilantro-infused brown rice and top it with the juicy lemon chicken. Garnish with extra cilantro if desired.
