A refreshing pink lemonade loaf that’s perfect for summer!
Ingredients

- 1 ½ cups all-purpose flour
- 1 cup granulated sugar
- ½ cup unsalted butter, softened
- 3 large eggs
- ⅓ cup pink lemonade concentrate
- 1 tsp baking powder
- ¼ tsp salt
- Zest of one lemon
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a loaf pan.
- In a bowl, whisk together flour, baking powder, and salt.
- In another bowl, cream the butter and sugar until light and fluffy; add lemon zest.
- Beat in eggs one at a time until fully incorporated.
- Mix in pink lemonade concentrate, then gradually combine dry ingredients until just mixed.
- Pour batter into the prepared pan and bake for 50-60 minutes or until a toothpick comes out clean.
- Cool in the pan for ten minutes before transferring to a wire rack.
Notes
- Store the loaf in an airtight container at room temperature for up to 3 days.
- For an extra tang, drizzle a lemon glaze over the cooled loaf.
