Ingredients

  • 1 ½ cups all-purpose flour
  • 1 cup granulated sugar
  • ½ cup unsalted butter, softened
  • 3 large eggs
  • ⅓ cup pink lemonade concentrate
  • 1 tsp baking powder
  • ¼ tsp salt
  • Zest of one lemon

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a loaf pan.
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. In another bowl, cream the butter and sugar until light and fluffy; add lemon zest.
  4. Beat in eggs one at a time until fully incorporated.
  5. Mix in pink lemonade concentrate, then gradually combine dry ingredients until just mixed.
  6. Pour batter into the prepared pan and bake for 50-60 minutes or until a toothpick comes out clean.
  7. Cool in the pan for ten minutes before transferring to a wire rack.
