Delicious salmon fillets baked in a creamy coconut curry sauce.
Ingredients

- 4 pieces salmon fillets (6 oz each)
- 1 cup full-fat coconut milk
- 4 cloves minced garlic
- 2 tbsp curry powder
- 2 tbsp freshly squeezed lime juice
- 2 tbsp unsalted butter
- 2 tbsp chopped cilantro

Instructions
- Preheat oven to 375°F (190°C).
- Grease a baking dish and arrange salmon fillets skin-side down.
- In a bowl, whisk together coconut milk, garlic, curry powder, lime juice, salt, and pepper until smooth.
- Pour the sauce over the salmon evenly.
- Bake for 20-25 minutes until salmon flakes easily with a fork.
- While baking, melt butter in a small pan over medium heat and add cilantro. Cook for about two minutes until fragrant.
- Drizzle garlic butter over the baked salmon before serving.
