Description

Delicious salmon fillets baked in a creamy coconut curry sauce.


Ingredients

Scale
  • 4 pieces salmon fillets (6 oz each)
  • 1 cup full-fat coconut milk
  • 4 cloves minced garlic
  • 2 tbsp curry powder
  • 2 tbsp freshly squeezed lime juice
  • 2 tbsp unsalted butter
  • 2 tbsp chopped cilantro
  • to taste Salt and pepper

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Grease a baking dish and arrange salmon fillets skin-side down.
  3. In a bowl, whisk together coconut milk, garlic, curry powder, lime juice, salt, and pepper until smooth.
  4. Pour the sauce over the salmon evenly.
  5. Bake for 20-25 minutes until salmon flakes easily with a fork.
  6. While baking, melt butter in a small pan over medium heat and add cilantro. Cook for about two minutes until fragrant.
  7. Drizzle garlic butter over the baked salmon before serving.
