- 1 medium sweet onion, chopped
- 2 bell peppers (red or yellow), diced
- 4 cloves garlic, minced
- 2 tsp ground cumin
- 2 tsp chili powder (adjust to taste)
- 1 (14 oz) can diced tomatoes with juice
- 2 cups low-sodium chicken broth
- Fresh cilantro for garnish
Instructions
- Heat 1 tbsp oil in a large pot over medium heat. Sauté chopped onion and diced bell peppers until softened (about 5 minutes).
- Add minced garlic, cumin, and chili powder; cook for an additional minute until fragrant.
- Stir in chicken breasts and rinsed black beans until well mixed.
- Pour in canned tomatoes and chicken broth; bring to a gentle boil.
- Lower heat to simmer, cover the pot, and cook for 20-25 minutes until the chicken shreds easily.
- Shred the chicken in the pot using two forks, stir well, adjust seasonings if needed, and serve garnished with fresh cilantro.
