Description

A deliciously sweet and creamy quesadilla filled with blueberries and cream cheese.

Ingredients

Scale
  • 4 Flour Tortillas
  • 1 cup Blueberries (fresh or frozen)
  • 1 cup Cream Cheese, softened
  • 2 tablespoons Honey or Maple Syrup
  • 1 teaspoon Vanilla Extract
  • 1 tablespoon Unsalted Butter

Instructions

  1. Prepare the Filling:
    • In a mixing bowl, combine the cream cheese, honey (or maple syrup), and vanilla extract.
    • Mix until smooth and well incorporated.
  2. Assemble the Quesadilla:
    • Spread a generous layer of the cream cheese mixture on one half of each tortilla.
    • Sprinkle blueberries evenly over the cream cheese layer.
  3. Fold and Grill:
    • Fold the tortilla in half to cover the filling.
    • Heat a skillet over medium heat and add a small amount of butter.
    • Place the folded tortilla in the skillet and cook until golden brown on one side, about 2-3 minutes.
    • Flip and cook the other side until golden and the filling is warm, about another 2-3 minutes.
  4. Serve:
    • Remove from heat and cut each quesadilla into wedges.
    • Serve warm.

Notes

  • Ensure cream cheese is fully softened to ease mixing and spreading.
  • If using frozen blueberries, thaw them and pat dry to prevent excess moisture.
  • For added flavor, consider sprinkling cinnamon or lemon zest over the blueberries before grilling.
  • Use a non-stick skillet for best results and easier cleanup.
  • Adjust sweetness by adding more or less honey/maple syrup according to taste.
