- 4 Flour Tortillas
- 1 cup Blueberries (fresh or frozen)
- 1 cup Cream Cheese, softened
- 2 tablespoons Honey or Maple Syrup
- 1 teaspoon Vanilla Extract
- 1 tablespoon Unsalted Butter
Instructions
- Prepare the Filling:
- In a mixing bowl, combine the cream cheese, honey (or maple syrup), and vanilla extract.
- Mix until smooth and well incorporated.
- Assemble the Quesadilla:
- Spread a generous layer of the cream cheese mixture on one half of each tortilla.
- Sprinkle blueberries evenly over the cream cheese layer.
- Fold and Grill:
- Fold the tortilla in half to cover the filling.
- Heat a skillet over medium heat and add a small amount of butter.
- Place the folded tortilla in the skillet and cook until golden brown on one side, about 2-3 minutes.
- Flip and cook the other side until golden and the filling is warm, about another 2-3 minutes.
- Serve:
- Remove from heat and cut each quesadilla into wedges.
- Serve warm.
Notes
- Ensure cream cheese is fully softened to ease mixing and spreading.
- If using frozen blueberries, thaw them and pat dry to prevent excess moisture.
- For added flavor, consider sprinkling cinnamon or lemon zest over the blueberries before grilling.
- Use a non-stick skillet for best results and easier cleanup.
- Adjust sweetness by adding more or less honey/maple syrup according to taste.
