Ingredients

- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 1/4 cup water
- 1/4 teaspoon ground Himalayan pink salt
- 1/2 cup light corn syrup
- 4 tablespoons butter, cubed and room temperature
- 1 1/4 cups unsalted dry roasted peanuts
- 1 teaspoon baking soda, sifted
- 1/2 teaspoon pure vanilla extract
Instructions
- Line a baking sheet with parchment paper and set aside.
- In a medium saucepan, combine granulated sugar, brown sugar, water, salt, and corn syrup. Stir over medium heat until sugar dissolves.
- Bring mixture to a boil without stirring until it reaches 300°F (hard crack stage) on a candy thermometer.
- Remove from heat and quickly stir in butter, peanuts, baking soda, and vanilla extract. The mixture will bubble up.
- Immediately pour the mixture onto prepared baking sheet and spread thinly with a spatula.
- Allow to cool completely at room temperature, then break into pieces.
- Store in an airtight container to maintain crispness.
