A delicious and easy gluten-free recipe for cornbread muffins filled with hot dogs, perfect for snacks or meals!

- 1 box gluten-free cornbread mix
- 1 package gluten-free hot dogs (6 to 8)
- cooking spray (I like coconut or olive oil cooking spray)
Instructions
- Preheat oven according to gluten-free cornbread mix directions.
- Spray mini muffin pan with cooking spray.
- Combine all of the ingredients to the gluten-free cornbread mix according to the box directions. For a dairy-free option, use almond, cashew, or coconut milk when making the cornbread mix.
- Fill the muffin pans with the gluten-free cornbread batter.
- Cut hot dogs into small bite-sized pieces.
- Place hot dog pieces into the center of each mini muffin pan filled with gluten-free cornbread batter.
- Cook according to the box directions for mini muffins (mine was for 15-17 minutes).
- Enjoy!
