- 2 large chicken breasts, diced
- 12 oz fettuccine or spaghetti
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1 cup freshly grated Parmesan cheese
- 2 tablespoons olive oil
- 2 tablespoons unsalted butter
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons chopped fresh parsley (optional)
Instructions
- Cook the pasta according to package instructions until al dente. Drain and set aside.
- Season the diced chicken breasts with salt and black pepper. In a large skillet, heat olive oil over medium-high heat, then add the chicken. Cook until golden brown and cooked through, about 5-7 minutes. Remove chicken and set aside.
- In the same skillet, reduce heat to medium and melt the butter. Add minced garlic and sauté for 1 minute until fragrant.
- Stir in heavy cream and bring to a gentle simmer. Add the grated Parmesan cheese and whisk until the sauce is smooth and slightly thickened, about 2-3 minutes.
- Add the cooked pasta and chicken to the skillet. Toss well to coat with the sauce. Garnish with chopped parsley if desired and serve warm.
Notes
- Using freshly grated Parmesan will yield the best results for the sauce.
- Feel free to add other vegetables, like broccoli or bell peppers, for added nutrition.
