Chocolate Cookies

Description

Delicious and chewy chocolate cookies made with bittersweet chocolate and mini chocolate chips.


Ingredients

Scale
  • 6 oz bittersweet chocolate (chopped)
  • 1/4 cup unsalted butter
  • 2 large eggs (preferably room temperature)
  • 3/4 cup granulated cane sugar
  • 1/4 cup cocoa powder
  • 3 tbsp cornstarch
  • 1/4 tsp baking powder
  • 1/4 tsp fine sea salt
  • 1/31/2 cup mini chocolate chips (or chopped chocolate)

Instructions

  1. Preheat oven to 350F. Line a large baking pan with parchment paper.
  2. In a saucepan over medium heat, add the butter to melt.
  3. Add the chopped bittersweet chocolate into the saucepan, then stir with a spatula until melted. Remove from heat to cool to room temperature.
  4. In a large bowl, whisk the eggs and sugar vigorously for 3-4 minutes, until smooth and pale.
  5. Add the cornstarch, cocoa powder, baking powder, and salt. Whisk until smooth.
  6. Use a spatula to fold in the melted butter-chocolate mixture just until combined. If the mixture is still warm to touch, skip to the next step before folding in the chocolate chips (or they will melt into the batter).
  7. Chill in the fridge for 10-15 minutes, just until firm enough to scoop. Don’t over chill the batter or it will cause a more dense cookie.
  8. Use a spoon to scoop 2 tablespoon-sized balls onto the prepared baking pan.
  9. Bake for 10-12 minutes, until set in the centers, crackly on top, and edges are crisp.
  10. Let cool on the pan for at least 10 minutes before enjoying!
  11. Troubleshooting: If they don’t easily remove from the pan, place back in the oven for 3-4 minutes on the bottom rack to help set the bottoms. Let rest another 10 minutes on the baking pan.

Notes

  • For best results, chill the batter and don’t over bake.
  • If cookies are too sticky, returning them to the oven briefly can help.
