Ingredients

  • 2 cups mixed vegetables (carrots, bell peppers, zucchini)
  • 2 tablespoons olive oil
  • 1 tablespoon turmeric powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons lemon juice
  • 1 1/4 cups water or vegetable broth

Instructions

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Spread chopped vegetables on the baking sheet. Drizzle with olive oil, sprinkle with salt, pepper, and turmeric; toss to coat.
  3. Roast for 25-30 minutes until tender and caramelized.
  4. Meanwhile, bring water or vegetable broth to a boil. Stir in couscous, cover, and remove from heat; let sit for 5 minutes.
  5. Fluff couscous with a fork and mix in roasted vegetables and lemon juice.
  6. Serve warm, garnished with fresh herbs if desired.
