This grilled salmon recipe is topped with a refreshing mango salsa, perfect for summer gatherings.

- 4 salmon fillets
- 2 tablespoons olive oil
- 2 tablespoons lime juice
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 large mango, diced
- 1/2 cup cucumber, diced
- 1/4 cup red onion, finely chopped
- 1 small jalapeño, finely chopped
- 2 tablespoons chopped fresh cilantro
- 1 tablespoon lime juice (for salsa)
Instructions
- Dice mango, cucumber, red onion, and jalapeño. Mix with cilantro and lime juice. Chill in fridge.
- Pat salmon dry. Brush with olive oil. Season with garlic powder, salt, pepper, and a squeeze of lime juice.
- Preheat grill to medium-high (around 400°F).
- Grill salmon skin-side down for 4–5 minutes per side, until opaque and flaky.
- Rest salmon for 2 minutes. Top with mango salsa and serve with lime wedges.
