Description

Delicious beef enchiladas topped with cheese and chilies.


Ingredients

Scale
  • 8 Burrito Flour Tortillas (or Gluten-Free Alternative)
  • 1 lb Ground Beef
  • 1 package Taco Seasoning
  • 10 oz Can of Rotel
  • 15 oz Can of Black Beans, Drained
  • 2 10 oz Cans of Mild Enchilada Sauce (or Gluten-Free Sauce)
  • 4 oz Can of Diced Chilies
  • 2 cups Shredded Mexican Cheese
  • 4 Chopped Green Onions

Instructions

  1. Preheat Oven to 375°F.
  2. Brown the ground beef and drain, then add in the taco seasoning as indicated on the package.
  3. Fill the tortillas with meat, rotel, and black beans. Then, roll them up tightly.
  4. Place them seam side down in a 9×13 baking dish.
  5. Repeat until the dish is filled, using 8 burrito-sized flour tortillas or 16 white corn tortillas.
  6. Once the dish is filled, pour the enchilada sauce evenly over the tortillas.
  7. Spread the chilies evenly over the sauce covered tortillas.
  8. Top with the cheese and green onions covering the entire dish with cheese.
  9. Bake for 30 minutes at 375°F.
  10. Remove and cool for 5 minutes, serve warm.

Notes

  • For a gluten-free option, use gluten-free tortillas and enchilada sauce.
