Description
Delicious deviled eggs made with avocado for a creamy texture and topped with festive sprinkles.

- 12 large eggs
- 1 ripe avocado
- 3 tablespoons mayonnaise
- 1 teaspoon Dijon mustard
- 1 tablespoon lemon juice
- 1 tablespoon fresh dill or parsley, finely chopped
- ¼ teaspoon salt
- ¼ teaspoon black pepper
- ½ teaspoon paprika
- 12 edible stars or holiday-themed sprinkles (optional)
Instructions
- Place the eggs in a saucepan and cover them with water. Bring to a boil over medium heat.
- Once boiling, turn off the heat, cover, and let the eggs sit for 10-12 minutes.
- Transfer the eggs to an ice bath to cool completely, then peel them.
- Slice each egg across the width (not lengthwise) to create flat-bottomed halves.
- Carefully remove the yolks and place them in a mixing bowl.
- Mash the yolks with avocado, mayonnaise, Dijon mustard, lemon juice, dill or parsley, salt, and pepper until smooth and creamy.
- Spoon the filling into a piping bag fitted with a star tip.
- Pipe the mixture into a tall swirl on each egg half, resembling a Christmas tree.
- Sprinkle with paprika for color and garnish with an edible star or sprinkle on top.
- Refrigerate until ready to serve.
Notes
- These deviled eggs can be prepared a day in advance for convenience.
- For added flavor, experiment with different herbs or spices in the filling.
