Instructions
- Crust
- Preheat the oven to 325°F (163°C).
- Mix graham cracker crumbs and melted butter until well-combined.
- Press into the bottom of a 9-inch springform pan.
- Bake for 10 minutes, then let it cool.
- Cookie Dough
- In a large bowl, mix softened butter, granulated sugar, and brown sugar until creamy.
- Add 2 teaspoons of vanilla extract and mix well.
- Gradually add flour and mix until combined.
- Stir in mini chocolate chips.
- Shape some dough into small balls for decoration and set aside the rest.
- Cheesecake Filling
- In a separate bowl, beat cream cheese, powdered sugar, and the remaining vanilla extract until smooth.
- Whip the heavy cream in another bowl until stiff peaks form.
- Gently fold the whipped cream into the cream cheese mixture.
- Divide the prepared cookie dough into small balls and fold them into the cream cheese mixture.
- Assembly
- Pour the cheesecake filling over the cooled crust, smoothing the top.
- Refrigerate for at least 6 hours, or until firm.
- Decoration
- Before serving, top the cheesecake with the set-aside cookie dough balls.
- Drizzle with chocolate syrup.
