Instructions
- Prepare the Crust: Preheat the oven to 325°F (163°C). In a bowl, mix graham cracker crumbs, cocoa powder, and melted butter until combined. Press the mixture into the bottom of a 9-inch springform pan. Bake for 10 minutes and let it cool.
- Make the Cheesecake Filling: In a large mixing bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract and sour cream until combined. Fold in some chopped chocolate candies.
- Bake the Cheesecake: Pour the cheesecake filling over the cooled crust. Bake for 50-60 minutes or until the center is set but still slightly jiggly. Turn off the oven, crack the door, and let it cool in the oven for about 1 hour. Refrigerate for at least 4 hours or overnight.
- Prepare the Ganache: Heat the heavy cream until it just begins to boil. Pour it over the chopped chocolate and let it sit for 5 minutes. Stir until smooth and then let it cool slightly.
- Assemble the Cheesecake: Pour the ganache over the chilled cheesecake, allowing it to drip down the sides. Decorate with more chopped chocolate candies and sprinkles.
