Description

A rich and creamy cheesecake topped with chocolate ganache and assorted chocolate candies, perfect for any celebration.

Ingredients

Scale
  • 1 and 1/2 cups graham cracker crumbs
  • 1/4 cup unsweetened cocoa powder
  • 1/2 cup unsalted butter, melted
  • 24 oz (3 packages) cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1 cup sour cream
  • 1 cup heavy cream
  • 8 oz semi-sweet chocolate, chopped
  • Assorted chocolate candies, chopped (e.g., chocolate bars, candy-coated chocolates)
  • Sprinkles for decoration

Instructions

  1. Prepare the Crust: Preheat the oven to 325°F (163°C). In a bowl, mix graham cracker crumbs, cocoa powder, and melted butter until combined. Press the mixture into the bottom of a 9-inch springform pan. Bake for 10 minutes and let it cool.
  2. Make the Cheesecake Filling: In a large mixing bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract and sour cream until combined. Fold in some chopped chocolate candies.
  3. Bake the Cheesecake: Pour the cheesecake filling over the cooled crust. Bake for 50-60 minutes or until the center is set but still slightly jiggly. Turn off the oven, crack the door, and let it cool in the oven for about 1 hour. Refrigerate for at least 4 hours or overnight.
  4. Prepare the Ganache: Heat the heavy cream until it just begins to boil. Pour it over the chopped chocolate and let it sit for 5 minutes. Stir until smooth and then let it cool slightly.
  5. Assemble the Cheesecake: Pour the ganache over the chilled cheesecake, allowing it to drip down the sides. Decorate with more chopped chocolate candies and sprinkles.

Notes

  • Ensure cream cheese is at room temperature for a smoother filling.
  • For a firmer cheesecake, chill overnight.
  • Use a hot knife to cut clean slices.
