Instructions
- Preheat Oven: Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
- Mix Wet Ingredients: In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract.
- Combine Dry Ingredients: In a separate bowl, whisk together the flour, cocoa powder, baking soda, and salt. Gradually add to the wet mixture, mixing until just combined.
- Fold in Chocolate and Raspberries: Carefully fold in the dark chocolate chips and fresh raspberries.
- Prepare Cookie Dough: Drop rounded tablespoons of dough onto the prepared baking sheet, making sure to leave space between each cookie.
- Add Raspberry Filling: Use your thumb to create a small indent in each cookie. Fill the indent with about 1/2 teaspoon of raspberry jam.
- Bake: Bake in the preheated oven for 12-15 minutes or until the cookies are set.
- Cool and Drizzle: Allow the cookies to cool on the baking sheet for 5 minutes before transferring to wire racks to cool completely.
- Melt Chocolate: In a microwave-safe bowl, melt 1/2 cup dark chocolate chips until smooth. Drizzle over the cooled cookies.
