Instructions

  1. Preheat Oven: Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Mix Wet Ingredients: In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract.
  3. Combine Dry Ingredients: In a separate bowl, whisk together the flour, cocoa powder, baking soda, and salt. Gradually add to the wet mixture, mixing until just combined.
  4. Fold in Chocolate and Raspberries: Carefully fold in the dark chocolate chips and fresh raspberries.
  5. Prepare Cookie Dough: Drop rounded tablespoons of dough onto the prepared baking sheet, making sure to leave space between each cookie.
  6. Add Raspberry Filling: Use your thumb to create a small indent in each cookie. Fill the indent with about 1/2 teaspoon of raspberry jam.
