Description

Delicious cranberry chocolate chip muffins that are perfect for breakfast or a snack.


Ingredients

  • 8 tablespoons (1 stick/ 113 grams) unsalted butter
  • 2/3 cup (130 grams) sugar
  • 2 large eggs
  • 1/2 teaspoon fresh orange zest
  • 1 1/4 cup (156 grams) all-purpose flour
  • 1 teaspoon baking powder
  • pinch of salt
  • 1/2 cup buttermilk (at room temperature)
  • 1 cup fresh cranberries
  • 1/2 cup dark chocolate chips

Instructions

  1. Preheat the oven to 400 and line 8 muffin cups with liners.
  2. In a small bowl, stir together the melted butter and sugar very well.
  3. Add the eggs and orange zest, and stir until it’s incorporated.
  4. Next, sprinkle the flour, baking powder, and salt on top. Stir a few times, then add the buttermilk. Stir just until combined, do not overmix.
  5. Finally, stir in the cranberries and chocolate chips.
  6. Divide batter between the liners, and bake for 18-20 minutes, or until the tops spring back and a toothpick inserted comes out clean.
  7. Let cool for 5 minutes before serving.

Notes

  • These muffins are best served warm.
  • You can substitute buttermilk with regular milk if necessary.
  • Add more chocolate chips for a sweeter result.
