Delicious cranberry chocolate chip muffins that are perfect for breakfast or a snack.
Ingredients

- 8 tablespoons (1 stick/ 113 grams) unsalted butter
- 2/3 cup (130 grams) sugar
- 2 large eggs
- 1/2 teaspoon fresh orange zest
- 1 1/4 cup (156 grams) all-purpose flour
- 1 teaspoon baking powder
- pinch of salt
- 1/2 cup buttermilk (at room temperature)
- 1 cup fresh cranberries
- 1/2 cup dark chocolate chips
Instructions
- Preheat the oven to 400 and line 8 muffin cups with liners.
- In a small bowl, stir together the melted butter and sugar very well.
- Add the eggs and orange zest, and stir until it’s incorporated.
- Next, sprinkle the flour, baking powder, and salt on top. Stir a few times, then add the buttermilk. Stir just until combined, do not overmix.
- Finally, stir in the cranberries and chocolate chips.
- Divide batter between the liners, and bake for 18-20 minutes, or until the tops spring back and a toothpick inserted comes out clean.
- Let cool for 5 minutes before serving.
Notes
- These muffins are best served warm.
- You can substitute buttermilk with regular milk if necessary.
- Add more chocolate chips for a sweeter result.
