Description
These brownie bites are rich, chocolatey, and surprisingly made with cottage cheese for added creaminess. Perfect for a sweet treat!

- 1 cup cottage cheese (blended until smooth)
- 1 cup unsweetened cocoa powder
- 1/2 cup honey or maple syrup
- 1/4 cup coconut oil (melted)
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 tsp baking soda
- 1/4 tsp salt
- chopped nuts
- mini chocolate chips
- sprinkle of sea salt
Instructions
- Preheat your oven to 350°F (175°C) and line a mini muffin tin with paper liners or coat it with non-stick spray.
- In a blender or food processor, blend the cottage cheese until smooth.
- In a large bowl, combine the blended cottage cheese, melted coconut oil, honey (or maple syrup), eggs, and vanilla extract. Mix until well combined.
- Gradually add the cocoa powder, baking soda, and salt to the wet mixture. Stir until you achieve a smooth batter. If using optional mix-ins, fold them in now.
- Spoon the brownie batter into the prepared mini muffin tin, filling each cup about 2/3 full.
- Place the tin in the preheated oven and bake for 15-20 minutes, or until a toothpick inserted into the center comes out mostly clean.
- Allow the brownie bites to cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
- Enjoy them warm or at room temperature!
