Description

These brownie bites are rich, chocolatey, and surprisingly made with cottage cheese for added creaminess. Perfect for a sweet treat!


Ingredients

Scale
  • 1 cup cottage cheese (blended until smooth)
  • 1 cup unsweetened cocoa powder
  • 1/2 cup honey or maple syrup
  • 1/4 cup coconut oil (melted)
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • chopped nuts
  • mini chocolate chips
  • sprinkle of sea salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line a mini muffin tin with paper liners or coat it with non-stick spray.
  2. In a blender or food processor, blend the cottage cheese until smooth.
  3. In a large bowl, combine the blended cottage cheese, melted coconut oil, honey (or maple syrup), eggs, and vanilla extract. Mix until well combined.
  4. Gradually add the cocoa powder, baking soda, and salt to the wet mixture. Stir until you achieve a smooth batter. If using optional mix-ins, fold them in now.
  5. Spoon the brownie batter into the prepared mini muffin tin, filling each cup about 2/3 full.
  6. Place the tin in the preheated oven and bake for 15-20 minutes, or until a toothpick inserted into the center comes out mostly clean.
  7. Allow the brownie bites to cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
  8. Enjoy them warm or at room temperature!
