Spiced Chicken with Coconut Milk

Description

A delicious spiced chicken dish cooked with coconut milk and served with rice.


Ingredients

  • 3 chicken breasts (sliced thin)
  • 1/2 teaspoon salt
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 1/4 teaspoon turmeric
  • 1/2 teaspoon cayenne
  • 1 teaspoon vegetable oil
  • 3 teaspoons minced garlic
  • 1/2 teaspoon ginger
  • 2 medium tomatoes (lightly blended or 1 can diced tomatoes)
  • 4 tablespoons plain greek yogurt
  • 3/4 cup water
  • 14 oz coconut milk
  • 1 teaspoon garam masala

Instructions

  1. Mix chicken breasts with salt, cumin, coriander, turmeric, cayenne, and let marinate for about an hour.
  2. In a large skillet, heat the vegetable oil over medium heat and add garlic and ginger until it starts to simmer.
  3. Add remaining spices (except for salt and garam masala) and simmer for one minute.
  4. Add the tomatoes and simmer for 3 to 4 minutes.
  5. Blend in the greek yogurt with a wire whisk.
  6. Add the cooked chicken pieces, water, and additional salt. Bring to a boil, then cover and simmer for 20 minutes.
  7. Stir in the coconut milk and garam masala, then simmer uncovered, stirring occasionally, until the sauce thickens.
  8. Serve with rice.

  • Letting the chicken marinate increases the flavor.
