Description
A delicious spiced chicken dish cooked with coconut milk and served with rice.
Ingredients

- 3 chicken breasts (sliced thin)
- 1/2 teaspoon salt
- 1 teaspoon ground cumin
- 1/2 teaspoon ground coriander
- 1/4 teaspoon turmeric
- 1/2 teaspoon cayenne
- 1 teaspoon vegetable oil
- 3 teaspoons minced garlic
- 1/2 teaspoon ginger
- 2 medium tomatoes (lightly blended or 1 can diced tomatoes)
- 4 tablespoons plain greek yogurt
- 3/4 cup water
- 14 oz coconut milk
- 1 teaspoon garam masala
Instructions
- Mix chicken breasts with salt, cumin, coriander, turmeric, cayenne, and let marinate for about an hour.
- In a large skillet, heat the vegetable oil over medium heat and add garlic and ginger until it starts to simmer.
- Add remaining spices (except for salt and garam masala) and simmer for one minute.
- Add the tomatoes and simmer for 3 to 4 minutes.
- Blend in the greek yogurt with a wire whisk.
- Add the cooked chicken pieces, water, and additional salt. Bring to a boil, then cover and simmer for 20 minutes.
- Stir in the coconut milk and garam masala, then simmer uncovered, stirring occasionally, until the sauce thickens.
- Serve with rice.
Notes
- Letting the chicken marinate increases the flavor.
- Adjust spices according to taste preference.
