Description

Delicious and hearty chicken soup made with bone-in chicken, fresh vegetables, and aromatic herbs.


Ingredients

  • 4 pieces bone-in, skin-on chicken
  • 8 cups bone broth (homemade or store-bought)
  • 2 cups carrots (diced)
  • 2 cups celery (diced)
  • 1 cup onion (chopped)
  • 4 cloves garlic (minced)
  • 2 teaspoons thyme (fresh or dried)
  • 2 leaves bay leaves
  • 1 teaspoon salt (adjust to taste)
  • 1 teaspoon black pepper (adjust to taste)

Instructions

  1. Brown the chicken in a large pot over medium-high heat for 5-7 minutes per side until golden brown.
  2. Sauté the chopped onions, minced garlic, diced carrots, and celery for 5-7 minutes until fragrant.
  3. Add the bone broth and herbs, bring to a boil, then reduce to low and simmer for 30-40 minutes.
  4. Remove the chicken, shred the meat, and return it to the pot.
  5. Simmer for an additional 10 minutes, then adjust seasoning before serving.

Notes

  • This soup can be made with leftover chicken as well.
  • Feel free to add your favorite vegetables or spices.
