Delicious and hearty chicken soup made with bone-in chicken, fresh vegetables, and aromatic herbs.
Ingredients

- 4 pieces bone-in, skin-on chicken
- 8 cups bone broth (homemade or store-bought)
- 2 cups carrots (diced)
- 2 cups celery (diced)
- 1 cup onion (chopped)
- 4 cloves garlic (minced)
- 2 teaspoons thyme (fresh or dried)
- 2 leaves bay leaves
- 1 teaspoon salt (adjust to taste)
- 1 teaspoon black pepper (adjust to taste)
Instructions
- Brown the chicken in a large pot over medium-high heat for 5-7 minutes per side until golden brown.
- Sauté the chopped onions, minced garlic, diced carrots, and celery for 5-7 minutes until fragrant.
- Add the bone broth and herbs, bring to a boil, then reduce to low and simmer for 30-40 minutes.
- Remove the chicken, shred the meat, and return it to the pot.
- Simmer for an additional 10 minutes, then adjust seasoning before serving.
Notes
- This soup can be made with leftover chicken as well.
- Feel free to add your favorite vegetables or spices.
