Description

Delicious roll-ups filled with cream cheese and blueberries, drizzled with a tangy lemon glaze.


Ingredients

  • 8 oz cream cheese (softened)
  • 1/2 cup sugar
  • 1 tsp vanilla extract
  • 1 tbsp lemon zest
  • 1 cup blueberries (fresh or frozen)
  • 4 slices bread (white or whole wheat)
  • 1 tbsp butter (melted)
  • 1 cup powdered sugar
  • 2 tbsp lemon juice

Instructions

  1. In a mixing bowl, combine softened cream cheese, sugar, vanilla extract, and lemon zest. Mix until smooth and creamy.
  2. Flatten each slice of bread using a rolling pin.
  3. Spread a generous amount of the cream cheese mixture onto each slice.
  4. Sprinkle blueberries over the cream cheese mixture.
  5. Roll up each slice tightly and place seam-side down in a greased baking dish.
  6. Preheat the oven to 350°F (175°C). Brush the tops of the roll-ups with melted butter.
  7. Bake in the preheated oven for 25 minutes or until golden brown.
  8. In a small bowl, whisk together powdered sugar and lemon juice until smooth.
  9. Drizzle the lemon glaze over the baked roll-ups before serving.
