- 8 oz cream cheese (softened)
- 1/2 cup sugar
- 1 tsp vanilla extract
- 1 tbsp lemon zest
- 1 cup blueberries (fresh or frozen)
- 4 slices bread (white or whole wheat)
- 1 tbsp butter (melted)
- 1 cup powdered sugar
- 2 tbsp lemon juice
Instructions
- In a mixing bowl, combine softened cream cheese, sugar, vanilla extract, and lemon zest. Mix until smooth and creamy.
- Flatten each slice of bread using a rolling pin.
- Spread a generous amount of the cream cheese mixture onto each slice.
- Sprinkle blueberries over the cream cheese mixture.
- Roll up each slice tightly and place seam-side down in a greased baking dish.
- Preheat the oven to 350°F (175°C). Brush the tops of the roll-ups with melted butter.
- Bake in the preheated oven for 25 minutes or until golden brown.
- In a small bowl, whisk together powdered sugar and lemon juice until smooth.
- Drizzle the lemon glaze over the baked roll-ups before serving.
