Description

This baked chicken dish is topped with fresh salsa and melted cheese, making it a flavorful and satisfying meal.


Ingredients

  • 4 boneless skinless chicken breasts (sliced in half lengthwise)
  • 1 tablespoon taco seasoning (or homemade)
  • Kosher salt and pepper (to taste)
  • 1 tablespoon olive oil (or avocado oil)
  • 1 cup shredded Cheddar (Monterey or Colby Jack cheese)
  • fresh cilantro (Optional, chopped avocado, sliced jalapeno)
  • 1 1/4 cup freshly chopped tomatoes
  • 1/4 cup finely diced onion
  • 1 Mexican spicy pepper (like serrano, jalapeno, anaheim, finely chopped)
  • 1/4 cup minced fresh cilantro
  • 1 lime (juiced)
  • Kosher salt and pepper (to taste)

Instructions

  1. Preheat your oven to 375F.
  2. Rub the chicken breasts with taco seasoning, Kosher salt, pepper, and olive oil.
  3. Place in a baking dish and bake for 25-30 minutes.
  4. Meanwhile, chop and prepare the fresh salsa with tomatoes, onion, Mexican spicy pepper, minced cilantro, lime juice, and season with Kosher salt and pepper.
  5. Remove the chicken from the oven and top with fresh salsa and shredded Cheddar.
  6. Return to the oven and continue baking for 8-10 minutes, until the internal temperature reaches 165F and the cheese is fully melted.
  7. Garnish with fresh cilantro and avocado, if desired.

Notes

  • For added flavor, use homemade taco seasoning.
  • Serve with tortillas for a complete meal.
