Description

Ingredients

  • 1 pound Chicken Breasts, boneless and skinless, diced
  • 4 cups Chicken Broth, low-sodium
  • 1 cup Heavy Cream (For a creamy texture)
  • 1 cup Parmesan Cheese, freshly grated (For maximum flavor)
  • 1 cup Carrots, chopped
  • 1 cup Celery, chopped
  • 1 medium Onion, diced
  • 3 cloves Garlic, minced
  • 1 tablespoon Italian Seasoning
  • To taste Salt and Pepper
  • 2 cups Spinach, fresh (For added nutrients and color)

Instructions

  1. Begin by dicing the chicken breasts, chopping the carrots, celery, and onion, and mincing the garlic.
  2. In the slow cooker, combine the diced chicken, chopped carrots, celery, onion, minced garlic, chicken broth, Italian seasoning, salt, and pepper. Give it a good stir.
  3. Cover the slow cooker and set it on low for about 6 to 7 hours or high for 3 to 4 hours, depending on your time availability.
  4. Once the cooking time is up, stir in the heavy cream and grated parmesan cheese. Mix until smooth and creamy.
  5. Add the fresh spinach to the pot, and let it wilt for about 5 minutes.
  6. Ladle the soup into bowls, garnish with extra parmesan if desired, and enjoy!
