- 1 pound Chicken Breasts, boneless and skinless, diced
- 4 cups Chicken Broth, low-sodium
- 1 cup Heavy Cream (For a creamy texture)

- 1 cup Carrots, chopped
- 1 cup Celery, chopped
- 1 medium Onion, diced
- 3 cloves Garlic, minced
- 1 tablespoon Italian Seasoning
- To taste Salt and Pepper
- 2 cups Spinach, fresh (For added nutrients and color)
Instructions
- Begin by dicing the chicken breasts, chopping the carrots, celery, and onion, and mincing the garlic.
- In the slow cooker, combine the diced chicken, chopped carrots, celery, onion, minced garlic, chicken broth, Italian seasoning, salt, and pepper. Give it a good stir.
- Cover the slow cooker and set it on low for about 6 to 7 hours or high for 3 to 4 hours, depending on your time availability.
- Once the cooking time is up, stir in the heavy cream and grated parmesan cheese. Mix until smooth and creamy.
- Add the fresh spinach to the pot, and let it wilt for about 5 minutes.
- Ladle the soup into bowls, garnish with extra parmesan if desired, and enjoy!
