- 1 lb chicken breast, diced
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce
- 1 tablespoon hoisin sauce
- 2 tablespoons vegetable oil
- 2 large eggs, beaten
- 1 cup frozen peas and carrots
- 2 cloves garlic, minced
- 1 small onion, chopped
- Salt and pepper to taste
- Green onions, sliced (for garnish)
Instructions
- Prepare Ingredients: Dice the chicken breast into bite-sized pieces and season with salt, pepper, and 1 tablespoon soy sauce. Beat the eggs in a small bowl and set aside.
- Cook the Chicken: Heat 1 tablespoon of vegetable oil in a large pan or wok over medium-high heat. Add the diced chicken and stir-fry until fully cooked and slightly browned. Remove from the pan and set aside.
- Scramble Eggs: In the same pan, add a little more oil if necessary, and pour in the beaten eggs. Quickly scramble the eggs until set, then remove from the pan and set aside with the chicken.
- Stir-Fry Vegetables: Add the remaining oil to the pan and sauté the onions and garlic until fragrant. Add the peas and carrots, and continue stir-frying for about 2-3 minutes.
- Combine Ingredients: Add the cooked rice to the pan with the vegetables. Stir well and add the cooked chicken and scrambled eggs to the mixture.
- Season: Pour in the remaining soy sauce, oyster sauce, and hoisin sauce. Mix well to ensure the rice and ingredients are fully coated and heated through.
- Final Touch: Adjust seasoning with salt and pepper to taste. Garnish with sliced green onions before serving.
Notes
- Rice: Using day-old cooked rice helps to prevent the dish from becoming too mushy. Freshly cooked rice can be spread on a tray to cool and dry slightly.
- Customization: Feel free to add other vegetables like bell peppers or bean sprouts for additional flavor and texture.
