  • 2 cups cooked rice (preferably day-old)
  • 1 lb chicken breast, diced
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon hoisin sauce
  • 2 tablespoons vegetable oil
  • 2 large eggs, beaten
  • 1 cup frozen peas and carrots
  • 2 cloves garlic, minced
  • 1 small onion, chopped
  • Salt and pepper to taste
  • Green onions, sliced (for garnish)

Instructions

  1. Prepare Ingredients: Dice the chicken breast into bite-sized pieces and season with salt, pepper, and 1 tablespoon soy sauce. Beat the eggs in a small bowl and set aside.
  2. Cook the Chicken: Heat 1 tablespoon of vegetable oil in a large pan or wok over medium-high heat. Add the diced chicken and stir-fry until fully cooked and slightly browned. Remove from the pan and set aside.
  3. Scramble Eggs: In the same pan, add a little more oil if necessary, and pour in the beaten eggs. Quickly scramble the eggs until set, then remove from the pan and set aside with the chicken.
  4. Stir-Fry Vegetables: Add the remaining oil to the pan and sauté the onions and garlic until fragrant. Add the peas and carrots, and continue stir-frying for about 2-3 minutes.
  5. Combine Ingredients: Add the cooked rice to the pan with the vegetables. Stir well and add the cooked chicken and scrambled eggs to the mixture.
  6. Season: Pour in the remaining soy sauce, oyster sauce, and hoisin sauce. Mix well to ensure the rice and ingredients are fully coated and heated through.
  7. Final Touch: Adjust seasoning with salt and pepper to taste. Garnish with sliced green onions before serving.

Notes

  • Rice: Using day-old cooked rice helps to prevent the dish from becoming too mushy. Freshly cooked rice can be spread on a tray to cool and dry slightly.
  • Customization: Feel free to add other vegetables like bell peppers or bean sprouts for additional flavor and texture.
