- 2 cups fresh corn kernels (or frozen)
- 1 cup all-purpose flour
- 1 tsp baking powder
- 2 large eggs
- 1 tsp chili powder
- Salt and pepper to taste
- Oil for frying
- 1 cup mayonnaise
- Juice of 1 lime
- 1 tbsp chili garlic sauce
Instructions
- In a large bowl, mix together fresh corn, flour, baking powder, eggs, chili powder, salt, and pepper until just combined.
- Heat oil in a non-stick skillet over medium heat until shimmering.
- Spoon about two tablespoons of batter into the skillet for each fritter, ensuring not to overcrowd the pan.
- Cook for 3 minutes on each side or until golden brown and crispy.
- For the aioli, whisk together mayonnaise, lime juice, and chili garlic sauce in a separate bowl.
- Drain cooked fritters on paper towels and serve warm with the chili lime aioli.
Notes
- For a spicier kick, adjust the amount of chili garlic sauce in the aioli.
- These fritters can be made ahead of time and reheated in the oven.
