Description

Ingredients

  • 2 chicken breasts, boneless and skinless
  • 250g farfalle pasta
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 3 cloves garlic, minced
  • 2 teaspoons dried Italian herbs (or a mix of oregano, basil, thyme)
  • Salt and black pepper to taste
  • Fresh parsley, chopped (for garnish)
  • Lemon zest (optional, for garnish)

Instructions

  1. Cook the Pasta: In a large pot of salted boiling water, cook the farfalle pasta according to package instructions until al dente. Drain and set aside.
  2. Prepare the Chicken: Season the chicken breasts with salt, pepper, and half of the dried Italian herbs. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the chicken breasts and cook for about 6-7 minutes on each side until cooked through and golden brown. Remove from the skillet and let rest before slicing.
  3. Make the Sauce: In the same skillet, reduce the heat to medium and add the butter and remaining olive oil. Add the minced garlic and cook until fragrant, about 30 seconds. Pour in the chicken broth and scrape any brown bits from the bottom of the pan. Allow it to reduce slightly. Lower the heat and stir in the heavy cream. Cook for 2-3 minutes until the sauce starts to thicken. Stir in the Parmesan cheese until melted and smooth.
  4. Combine Everything: Add the cooked pasta to the skillet and toss to coat in the cream sauce. Slice the chicken and arrange on top of the pasta. Sprinkle with the remaining dried herbs and chopped parsley.
  5. Serve: Serve the dish warm, garnished with additional parsley and a touch of lemon zest if desired.

Notes

  • If you prefer a thicker sauce, let it simmer a bit longer before adding the pasta.
  • For extra flavor, marinate the chicken with a splash of lemon juice prior to cooking.
  • You can also add vegetables like spinach or mushrooms to the sauce for added nutrition and flavor.
