- 1 small onion, diced
- 3 cloves garlic, minced
- 1 tsp chili powder
- 1 tsp ground cumin
- ½ tsp smoked paprika
- ½ tsp salt (adjust to taste)
- ¼ tsp black pepper
- 3 cups cooked chicken, shredded
- 4 cups chicken broth
- 1 cup corn kernels (fresh, frozen, or canned)
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup salsa or diced tomatoes with green chilies
- ¾ cup heavy cream
- ½ cup shredded cheddar or Monterey Jack cheese
- Juice of ½ lime
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion and sauté for 3–4 minutes until softened.
- Stir in garlic, chili powder, cumin, paprika, salt, and pepper; cook 30 seconds until fragrant.
- Add chicken broth, shredded chicken, corn, black beans, and salsa. Bring to a gentle boil.
- Reduce heat and simmer for 15 minutes.
- Stir in heavy cream and shredded cheese until melted and creamy.
- Add lime juice, taste, and adjust seasoning.
