Description

This creamy chicken chili is a perfect comfort food that combines tender chicken, beans, and spices in a rich broth.


Ingredients

  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 tsp chili powder
  • 1 tsp ground cumin
  • ½ tsp smoked paprika
  • ½ tsp salt (adjust to taste)
  • ¼ tsp black pepper
  • 3 cups cooked chicken, shredded
  • 4 cups chicken broth
  • 1 cup corn kernels (fresh, frozen, or canned)
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup salsa or diced tomatoes with green chilies
  • ¾ cup heavy cream
  • ½ cup shredded cheddar or Monterey Jack cheese
  • Juice of ½ lime

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and sauté for 3–4 minutes until softened.
  3. Stir in garlic, chili powder, cumin, paprika, salt, and pepper; cook 30 seconds until fragrant.
  4. Add chicken broth, shredded chicken, corn, black beans, and salsa. Bring to a gentle boil.
  5. Reduce heat and simmer for 15 minutes.
  6. Stir in heavy cream and shredded cheese until melted and creamy.
  7. Add lime juice, taste, and adjust seasoning.
