Instructions

  1. Preheat the Oven: Preheat your oven to 400°F (200°C).
  2. Prepare the Muffin Tin: Spray a muffin tin with non-stick cooking spray to prevent sticking.
  3. Prepare the Potato Mixture:
    • Squeeze out excess moisture from the grated potatoes using a clean kitchen towel or paper towels.
    • In a large mixing bowl, combine the grated potatoes, cheddar cheese, Parmesan cheese, melted butter, green onions, bacon bits (if using), salt, and pepper. Mix until well combined.
