- 4 medium-sized potatoes, peeled and grated
- 1 cup shredded cheddar cheese
- 1/4 cup grated Parmesan cheese
- 1/4 cup butter, melted
- 2 green onions, finely chopped
- 1/2 cup crispy bacon bits (optional)

Instructions
- Preheat the Oven: Preheat your oven to 400°F (200°C).
- Prepare the Muffin Tin: Spray a muffin tin with non-stick cooking spray to prevent sticking.
- Prepare the Potato Mixture:
- Squeeze out excess moisture from the grated potatoes using a clean kitchen towel or paper towels.
- In a large mixing bowl, combine the grated potatoes, cheddar cheese, Parmesan cheese, melted butter, green onions, bacon bits (if using), salt, and pepper. Mix until well combined.
- Shape the Cups:
- Divide the potato mixture evenly among the muffin tin cups. Press the mixture down firmly and shape it to form a cup.
- Bake: Place the muffin tin in the preheated oven and bake for 25-30 minutes, or until the potato cups are golden brown and crispy on top.
- Serve:
- Allow the potato cups to cool slightly before carefully removing them from the muffin tin.
- Garnish with additional chopped green onions if desired, and serve warm.
Notes
- For an extra cheesy flavor, sprinkle additional cheese on top of each cup before baking.
- To make them spicier, add a pinch of cayenne pepper or smoked paprika to the potato mixture.
