Description
A delicious and creamy soup made with andouille sausage, potatoes, and mixed vegetables seasoned with Cajun spices.
Ingredients

- 1 Andouille sausage, sliced
- 4 Yukon Gold or russet potatoes, diced
- 2 cups mixed vegetables (carrots, celery, bell peppers)
- 2 tsp Cajun spices (cayenne pepper, paprika, onion powder)
- 1 cup heavy cream
- 1 cup cheddar cheese, shredded
- Salt and pepper, to taste
- 2 tbsp olive oil
Instructions
- In a large pot, heat olive oil over medium heat.
- Add sliced andouille sausage and cook until browned.
- Stir in diced potatoes and mixed vegetables, cooking for a few minutes until they start to soften.
- Add Cajun spices and stir to coat the veggies.
- Pour in enough water or chicken broth to cover the ingredients and bring to a boil.
- Reduce the heat and simmer until the potatoes are tender.
- Stir in heavy cream and cheddar cheese until melted and well combined.
- Season with salt and pepper to taste.
- Serve hot and enjoy!
