Description

Delicious and fluffy banana pancakes made with ripe bananas and Greek yogurt.


Ingredients

  • 2 ripe bananas
  • 1 cup Greek yogurt
  • 1 cup flour
  • 2 eggs
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • Oil or butter for cooking

Instructions

  1. Mash the ripe bananas until smooth in a mixing bowl.
  2. Add Greek yogurt, eggs, and vanilla extract to the mashed bananas, and mix until combined.
  3. In a separate bowl, whisk the flour, baking powder, baking soda, and salt together.
  4. Gradually add the dry ingredients to the banana mixture, stirring gently until just combined.
  5. Preheat a skillet over medium heat and lightly grease it with oil or butter.
  6. Pour 1/4 cup of batter onto the skillet for each pancake, leaving space between them.
  7. Cook until bubbles form on the surface, about 2-3 minutes, then flip and cook until golden brown on both sides, about 1-2 minutes more.
