- 2 ripe bananas
- 1 cup Greek yogurt
- 1 cup flour
- 2 eggs
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- Oil or butter for cooking
Instructions
- Mash the ripe bananas until smooth in a mixing bowl.
- Add Greek yogurt, eggs, and vanilla extract to the mashed bananas, and mix until combined.
- In a separate bowl, whisk the flour, baking powder, baking soda, and salt together.
- Gradually add the dry ingredients to the banana mixture, stirring gently until just combined.
- Preheat a skillet over medium heat and lightly grease it with oil or butter.
- Pour 1/4 cup of batter onto the skillet for each pancake, leaving space between them.
- Cook until bubbles form on the surface, about 2-3 minutes, then flip and cook until golden brown on both sides, about 1-2 minutes more.
- Serve warm with your favorite toppings.
Notes
- For a sweeter pancake, you can add a tablespoon of maple syrup or honey to the batter.
- These pancakes are best served warm and can be topped with fresh fruit, nuts, or syrup.
