- 1 cup cottage cheese
- 4 large eggs
- 1/2 cup Parmesan cheese
- 2 tablespoons fresh chives
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt to taste
- Pepper to taste
- 1 cup bell peppers, chopped
- 1 cup spinach, chopped
- 1/2 cup sun-dried tomatoes, drained
Instructions
- Preheat the oven to 375°F (190°C) and grease a baking dish.
- In a mixing bowl, whisk together the eggs and cottage cheese until combined.
- Fold in the bell peppers, spinach, chives, and sun-dried tomatoes, along with garlic powder, paprika, salt, and pepper.
- Pour the mixture into the greased baking dish and spread evenly.
- Sprinkle Parmesan cheese on top and bake for 30-35 minutes until golden and set.
- Let cool for a few minutes before serving.
